The Dove burger in Notting Hill, London, created by chef Jackson Boxer, is a highly exclusive, thick, and coarsely minced patty made from 50-day dry-aged British beef (including rib cap, brisket, and suet). It is topped with melted Gorgonzola Dolce, Champagne-butter onion Lyonnaise, and served in a fermented potato bun. Only 10, or a limited number, are made per service (lunch and dinner) so they sell out within 10 minutes of the restaurant opening.
